Restaurant Review: Frankie & Jo's (Ballard Grand Opening)

Frankie & Jo's is a plant based, dairy free, vegan and GMO free icecream. They have a Capitol Hill location and lucky me they just opened on Friday in Ballard! For my lunch break I decided to head over there to check it out.

Franke & Jo's

The whole scoop shop is an Instagrammers dream. I can already see the cactus wall going to be all over people's Instagram feeds. The outdoor space is a perfect hangout spot, the glassed in area has chairs and plants.

I felt a little sticker shock at the prices, a pint goes for $13, but when I tasted the icecream deliciousness I had to restrain myself from running back there. I tried the Chocolate Mint Brownie and the seasonal Molten Chocolate Cake.

The Chocolate Mint Brownie is creamy and has little crunchy brownie bits along with whole chunks of brownie. So delicious!

The Molten Chocolate Cake is dark chocolate goodness with chunks of cake and flecks of chocolate. It's so creamy that you can't resist going back for another bite.

I can't wait to hang out at this icecream place again, rain or shine!

Vegan Recipe: Celery Root with Walnuts

Celery root is one of my new favorite veggies to play with. This dish could be a nice light lunch or make a great side salad. The dressing is so creamy and delicious. The key for hitting this dish out of the park is slicing the celery root really thinly, invest in a mandoline or a really sharp knife to ensure you get thin strips.

  • 1/3 cup walnuts
  • 1/2 cup dairy-free yogurt (my favorite is So Delicious with coconut milk)
  • 3 TBSP lemon juice
  • 2 TBSP olive oil
  • 1 TBSP chopped chives
  • 1 TBSP chopped parsley
  • 1/2 TSP salt
  • 1/4 TSP pepper
  • pinch of organic cane sugar
  • 1 large celery root (cleaned, peeled)
  • 3 ribs of celery, sliced

How to Make (serves 4):

  • Whisk together yogurt, lemon juice, olive oil, chives, parsley, salt, pepper and sugar.
  • Using mandoline or sharp knife slice celery root as thinly as possible. Toss with dressing and let sit for 10 min to soften, toss occasionally.
  • While celery root sits, coarsely chop walnuts.
  • Add celery to dish and toss together, add salt and pepper to taste.
  • Serve with walnuts on top.

My Vegan Journey

Contemplating this new lifestyle

Contemplating this new lifestyle

Monday February 26, 2018 was the day I went down the Netflix documentary rabbit hole. I watched What the Health, Cowspiracy and Rotten. For awhile I've been contemplating removing dairy from my diet because of how it makes me feel, but after learning about how meat negatively impacts health and the horribleness that is agribusiness I made the decision to embark on a vegan diet.

This is entirely new territory for me. I've effectively gone from prolific carnivore to eliminating two major cornerstones of my diet. I want to document my journey but also be held accountable. I foresee my diet evolving over time as I get used to this lifestyle and I very much look forward to learning alternative ways of cooking!
